Sous-Chef / Operations Manager

Job Description

*Objective of position :

Primarily based in the kitchen as a Sous Chef, you will also assist the owner/operator in managing the Dodson Street Beer Garden and the Marlborough Brewing Company within agreed budgetary limits and parameters of the law, particularly liquor law.

*Responsible for :

Preparing and cooking food, estimating food and labour costs, ordering food supplies, planning menus with Head Chef.
All restaurant, banqueting and catering facility staff. Administration duties for the Marlborough Brewing Company.

*Internal relationships :

Head Chef, Bar Manager, Payroll Officer, Chartered Accountant

*Duties and responsibilities :

Sous Chef (Kitchen related) duties:
? planning menus with Head Chef, estimating food and labour costs, and ordering food supplies
? monitoring quality of dishes at all stages of preparation and presentation
? discussing any food preparation issues with Head Chef, Demi Chef and waiting staff
? demonstrating techniques and advising on cooking procedures
? preparing and cooking food
? explaining and enforcing hygiene regulations.
Administration related duties:
? ensure reports and administration requirements are promptly submitted
? ensure profit margins are maintained and agreed costs are not exceeded through effective control systems
? corresponding with international travel agencies, as required.
Duty Manager (Front of House) related duties:
? ensure the prompt and efficient service of all meals, snacks, beverages and functions to the required standards
? attend promptly to customer feedback
? ensure the kitchen and the restaurant are maintained and
stocked with the stipulated requirements, including with
consumable and non-consumable goods
? ensure the efficient running of the banqueting and catering facilities
?ensure that waiting and kitchen staff are always correctly and smartly dressed, they offer professional and courteous service to their customers and they comply with the required hygiene standards
? ensure company and statutory hygiene standards are maintained in all areas
? be fully conversant with all statutory requirements regarding food and beverage operation, that all licenses, including Special Licenses, are applied for and the conditions affecting the issues of a liquor license are not jeopardized
? ensure monthly stock takes are conducted
? ensure an effective table and function reservation system
is in operation
? carry out, or ensure regular on-the-job training is taking
place to the agree standards
? any reasonable duties the employer may require.

* The right candidate has :

?worked as a Sous-Chef or in a similar position for more than 2 years.
? successfully completed an apprenticeship in Professional Cookery and achieved Level 4 National Certificate in Hospitality or equivalent.
? the ability to fit into different roles / positions as needed
? a sound understanding of NZ Liquor Law, Dodson Street
Beer Garden can help gaining the General Manager’s License.

Desirable attributes :
good understanding of Restaurant Management including Tour Group Management
? good knowledge of the German language, as Dodson Street is a German Ethnic Restaurant.
